GREEN VEGETABLES – A SUPER FOOD
Green vegetables really do provide us with a panacea of nutrition. It's so important to make sure our green vegetables are organic so they aren't covered in glyphosate, pesticides and herbicides.
The best way to get kids to eat their greens is to get them involved in a veggie bed. When they see how their food grows children inevitably get stuck in and explore their vegetables. We've learnt this through the 'Veggie Buddies' educational classes we've been teaching at schools for the past 3 years.
There are many nutritional benefits of eating enough fruits and veggies when you are young.
Green fruits and veggies are particularly nutritious very high in vitamins and are a great source of iron and B12. Eating plenty of greens helps to give your kids energy and strength. Benefits also include promoting good health, boosting their immune and digestive systems and preventing illnesses, as well as healthy growth and development.
The NSW Ministry of Health studies show that 56% of primary school aged children and 80% of high school aged children, are not eating enough fruits and veggies. Being part of the preparation process while cooking with fruits and veggies is a great way to encourage children to eat and enjoy their fruits and veggies.
Here at My Organic School we have developed a healthy eating curriculum to be taught in school veggie beds called "Veggie Buddies'. Class 3/. is called 'Eat your Greens'. GETTING THE SUPER GREENS INTO YOUR KIDS
½ cup almond milk
1 handful or organic spinach
1 teaspoon mint
½ mango cheek
handful of almonds for protein
GREEN HULK SMOOTHIE
1 banana (nice frozen)
1 handful steamed greens (you can pre freeze these if you want to get super organised)
1 tablespoon of protein powder, bareblends 100% whey or vegan protein is my preference
Sautee all the organic greens of your choice in butter, ghee or olive oil with garlic
Organic green peas, brocolli, asparagus, kale, spinach and parsley
You can try sautéing until they are crispy
GREEN VEGETABLE SOUP
1 litre bone broth
green vegetables – 2-3 cups
4 cloves garlic
1 knob ginger crushed
1 teaspoon sea salt
chop green vegetables.
Sautee garlic, ginger and onion, throw in green vegetables and sautee for a few minutes, cover with bone broth
Bring to boil then blend
Add salt to taste
You can serve your green soup with a tablespoon of yoghurt in the middle
GREEN ICE BLOCKS – TEENAGE MUTANT NINJA TURTLES
Spinach or kale steamed and frozen
1 frozen banana
½ cup almond milk
1 tablespoon of maple syrup
blend all ingredients and then pour into ice block moulds, freeze overnight
