I love to highlight some of the less talked about vegetables for their beautiful nutrient dense offerings.

The humble sweet potato can be full of nutrients and contain enough gut fibre to get the gut moving and healing.

Sweet potato is full of

  • Vitamin A

  • Vitamin C

  • B6

  • Antioxidants

  • Anti-inflammatory properties

  • Gut healing properties

  • Fibre

I love organic sweet potato because you can leave the dirt on, so we can assimilate with the soil and gain all the pre-biotic qualities.

My kids love sweet potato chips as a vegetable to add to their dinner

1 large organic sweet potato chopped into chip sized pieces

1 tablespoon organic olive oil

1 teaspoon of sea salt

bake in oven of 200c for 45 minutes until crispy
